It’s Mother’s Day here in the U.S., so for all of you who bear the title, Happy Mother’s Day!
For my wife this morning, I put aside my fear of batter and actually baked something. The fact that it came out well, and that I didn’t throw anything across the kitchen in the process is probably due in most part to the fact that I used a mix, rather than attempting these little guys on my own. (I’ll get there sooner or later, I promise. but the morning of Mother’s Day isn’t the time for me to attempt the heretofore untried waters of baking!)
These mini-muffins were derived from a box of Krusteaz® cranberry quick bread mix, and dutifully follow the cranberry streusel muffin directions on the back of the box. I’m sure that many of you could whip these up from scratch, and from memory, but my wife was suitably impressed with my departure from vegetables and proteins.
The carnage was action movie-worthy. The poor muffins never stood a chance.

Mother's Day Mini Muffins
Ingredients
Muffins:
- 1 15oz package Cranberry Quick Bread mix
- 2/3 cup water
- 1/3 cup vegetable oil
- 2 eggs
Streusel Topping:
- 1/4 cup sugar
- 2 tbsp all-purpose flour
- 1 1/2 tbsp unsalted butter
Instructions
For Muffins:
- In medium bowl, blend together quick bread mix, water, oil, and eggs. Spoon batter into lightly greased muffin cups, filling 2/3 full. Set aside.
For Streusel:
- In small bowl, stir together sugar and flour. Cut in butter with a fork or pastry knife until mixture is crumbly. Sprinkle over batter in muffin cups.
- Bake 18-20 minutes or until toothpick inserted in center of muffin comes out clean.
- Makes approximately 20 mini-muffins.
- Serve with Celestial seasonings Lemon Zinger tea with a tablespoon of honey and 1/4 tsp fresh lemon zest.

Hey, it’s the thought that counts, and you get highest marks for that! Next step is to alter the box recipe in some way — add something to mix in. Then eventually you’ll get to scratch baking — but by then, those delicious muffins you made today will be gone!
