Here’s a simple little idea to spruce up your Halloween dinners, or any other dinner that inclues a pot pie. Skip the pie crust and roll out some puff pastry to any size you desire, then cut shapes out of the puff pastry dough to let the fillings show through.
In my case this was used on a pot pie made with lamb, vegetables, mint and potatoes, but this technique can be used on any application that requires a crust. Heck, you could even use this on apple pies or pumpkin pies.
Also, you don’t have to cut a perfect pie crust, just arrange the cutout shapes around the dish, as we did with the pie in the top left below. It’s cute, it’s fun, the kids loved it and we had fun doing it.
