I was shocked, too. Actually, I was incredulous. I didn’t believe it was possible, but it is. All you need to make what might just be the most perfect basic muffin is baking mix, sugar and, here’s the shocker… Dark beer. 3 ingredient muffins might just change your world.

Don’t worry, they don’t  taste anything at all like beer when they’re done. The ingredients might sound savory, but the muffins come out of the oven sweet, light, airy and utterly delectable. It’s almost a contradiction in terms, but it’s true. Imagine the best plain muffin you’ve ever eaten and it’s got to be very close to this.  And, if you’ve never had a plain muffin you truly liked, this is the recipe that will win you over.

Every kitchen needs a go-to muffin recipe for those occasions when a quick treat is needed and this is now ours.  The ingredients are readily available in our home and the sheer simplicity of the recipe begs for modifications. I’ll be making many different variations of this recipe in the near future. In fact, I’ can already envision about 30 variations, so expect a lot of muffins in the coming year.

Trust me on this one.  These were such a hit with everyone in my family that I had to make them 3 times before I had any left to take a photo of. My kids and my wife polished off the first two batches before I could get anything set up. They’re good. Very good.

And now, a note on ingredients: Because of the simplicity of this recipe, this is not the time to skimp on the quality of anything you put into it.  We make our own biscuit mix in the Russell kitchen, so I suppose for us this actually has more than 3 ingredients, but our mix, like yours, sits waiting in the pantry. I’m sure that any other plain baking mix would work here as well, though the mix I make is based on BisQuick®, so I’m pretty certain that it would work just as well as our homemade version.

Don’t use cheap beer! A good dark beer is called for here. something with a note of sweetness. We used Shiner Bock with great results, but any good dark porter should work well. Make sure you’re not using a bitter beer or an IPA. (You could try using a Tangerine or other flavored beer for a different variation in taste too, but try it with a good dark first.)

  • 3 cups Baking Mix
  • 4 teaspoons sugar
  • 1 (12 ounce) dark beer
Method
  1. Heat oven to 350 degrees.
  2. Whisk baking mix and sugar together in a large bowl. Add beer and mix until combined. Fill greased muffin cups 2/3 ful with batter.
  3. Bake 15-20 minutes, or until a toothpick inserted in the center of a muffin comes out clean. (It will depend on your oven, so check frequently after 15 minutes.)
  4. Cool on wire rack.
  5. Share and enjoy!

    I love this idea, and will be making these SOON.

    I often use gluten free flours and SODA to make cakes, I wonder if I could do the same here, using my gf blend with some xanthan? I think I will give it a try… and I would NEVER use cheap beer *gasp*

    a bit of cheddar would be great in these too…

      and yes, I know I contradict by saying I will use beer with a gf attempt – we are “as gf as possible” around here, always making an exception for a good beer ;)

    is there any specific ingredients for the baking mix? i dont think we have those in our groceries as a solely baking mix.

      You can either make your own using the recipe here or just use whatever kind you buy fro the market. (Bisquick, Jiffy, Pioneer, etc.)
