Steak Tacos with Feta Cheese – A fast, simple, delicious, weeknight dinner

So, it’s a hectic night with a ton of distractions. Everyone’s home from work or school and you’ve all got stuff to do. To top it off, Y’all are starving, and you need to get dinner on the table fast! No worries, we’ve got you covered with these super simple and seriously quick steak tacos.

The great thing about these steak tacos is that they’re a complete meal all by themselves. All the food groups are accounted for, and yet they sacrifice nothing. This is a hot, homemade meal, ready and on the table in around 30 minutes. To top that off, since we’re just using packaged salad greens, the only thing you really have to prep is the onions and the steak. A winner all the way around, if you ask me.

But even if it’s not a busy weeknight and you just want something other than burgers and dogs on a lazy weekend by the pool, these guys are a perfect fit, too. They’re on and off the grill in just a few minutes. This means you’ll have more time to spend with friends and family, and not standing by a hot grill on a blistering summer day.

Steak Tacos with Feta Cheese

I know we usually do a step-by-step walk through on our recipes, but this one is really so foolproof that I think we’ll just get to it. So let’s jump right in and make some steak tacos!

Steak Tacos with Feta Cheese

Prep Time: 5 minutes
Cook Time: 10 minutes
Resting Time: 5 minutes
Total Time: 20 minutes

Super simple, amazingly flavorful. These Steak and Feta tacos are perfect for a quick weeknight meal or a weekend on the grill.

Ingredients

  • 2 pounds New York strip steak
  • Salt & Pepper, To taste
  • 2 Tablespoons Olive Oil, For cooking
  • 2 medium Sweet or Red Onions, Cut in strips
  • 2 cups Salad Greens, Cut or torn in bite-sized pieces
  • 1/2 cup Feta Cheese, Cut in strips

Instructions

Stove Top Method:

  1. Place a large, heavy-bottomed skillet or grill pan over medium high heat.
  2. Pat steaks dry with a paper towel. Season both sides of the steak well with salt and pepper and press the seasoning firmly into the meat.
  3. Brush both sides of the steaks with olive oil and lay gently into the preheated pan. (It's gonna get smoky, so turn on your vent hood or open a window!)
  4. Cook 3 to 5 minutes per side, or until the steak is well browned and is cooked to your desired wellness. *See Notes*
  5. Remove the steaks from the pan and allow to rest for at least 5 minutes before slicing.

Grill Method:

  1. Fire up your grill and get it heated. (On a gas grill, just light one side and crank it up to high. On a charcoal grill, get the coals nice and white, then arrange them on one side of the grill, leaving a cool spot on the other side.)
  2. Pat steaks dry with a paper towel. Season both sides of the steak well with salt and pepper and press the seasoning firmly into the meat.
  3. Place steaks directly over the flame and cook for about 2 minutes per side. Then move to the cool part of the grill and cover. Allow the steak to cook for another 3 to 5 minutes, depending on your desired wellness. *See Notes*
  4. Remove from the grill and allow to rest at least 5 minutes before slicing.

Final Assembly:

  1. Slice steaks into thin strips. Arrange salad greens, onions, steak slices and feta cheese on tortillas.
  2. Optional: Add a healthy dollop of homemade Tzatziki sauce for a great Mediterranean zing! 

Notes

Cooking times will vary massively depending on how thick your steaks are! Ours were 1-inch thick, so they cooked very quickly. If yours are thicker, they will take a bit longer.

If you are new to cooking steaks, knowing when it's "just right" can be an issue. I highly recommend using an instant read thermometer if you're just starting out.

BUT...

If you want to be a bit more "Chefy" about it, or you've got more experience cooking or grilling meats, you can always use the finger test which is described in the infographic below.

What I would have done differently:

These steak tacos are absolutely fabulous just as they are, but I think they could have been better with the addition of a little fresh Rosemary on the steaks, and a generous dollop of tzatziki sauce (Gyro sauce) as a garnish. That would really take these over the top.
