Peanut Butter Cup Sandwich Cookies Recipe

Yesterday I asked what could possibly be better than a peanut butter cookie with a hint of chocolate. The answer is this: Peanut butter sandwich cookies with just a hint of chocolate and filled with the same stuff you find inside a peanut butter cup. Yep, those peanut butter cups. These are too good to be believed.

This is my third installment of #WillWriteForCookies, a campaign in support of everyone participating in National Novel Writing Month, or NaNoWriMo for short. if you haven’t heard of it, NaNoWriMo is a challenge to write a 50,000 word novel in thirty days. This kind of mental expenditure takes fuel, and I’m supporting the effort this year with cookies. 30 cookie recipes in 30 days, to be precise.

Yes, I’m nuts. I’m also writing 50,000 words in 30 days. Go figure. But let’s get back to the cookies!

The really cool part of this recipe is its versatility. If you’d rather not go with PB cookie with PB filling, but would rather have chocolate cookies with a PB filling, then just use chocolate cookies. It’s that simple. No fuss. No Muss. No Drama.

Still awesomeness, though.

This recipe is so simple that I’m going to break with habit and actually do step-by-step photos for a change. (I know. The world must be coming to an end or something, right? Well. Anyway. Let’s get to this!)

First, you have to make some cookies. Since I think this will work with pretty much anything that goes with peanut butter, I’m just going to say you’ll need 24 cookies. Whatever you think goes well with peanut butter works here.

Next, get a half-cup of peanut butter and plop it in a bowl.

Then, add a quarter cup of powdered sugar.

A bit of salt. (Sea salt in this case.)

Mix all of this together, adding more or less powdered sugar depending on your peanut butter. (If the PB is oily, it’ll take more sugar to get to the right consistency. Play around with it.) See how it looks a little “stringy”? I could have gone a bit thicker here.

Now, plop half a teaspoon or so on the bottom of a cookie.

Then top that with another cookie.

Smoosh that up a bit. Just until it looks like this. (Yes. “Smoosh” is a technical term.)

A good squeeze will make for the perfect peanut butter cup sandwich cookies.

In the end, what you get is an ultra-cookie. They’re crazy, amazing, OMG, GTFO good.

Deliciously moist, peanut-buttery and satisfying. Our peanut butter cup sandwich cookies are a crowd pleaser that should definitely have a place at your Holiday table.

Instructions

  1. Bake cookies per instructions and let cool completely.
  2. Mix remaining ingredients in a medium bowl, adjusting the amount of powdered sugar as needed to achieve desired consistency.
  3. Place a scant half-teaspoon one the bottom of one cookie. Top with the another cookie and press, twisting slightly, until the filling is flattened and is near the edges of the cookies.
  4. Repeat for remaining cookies.
  5. Share and enjoy!
