Lisa over at the Homesick Texan recently did a post on breakfast tacos. That post got me thinking about breakfast foods in general, and this morning I caved in and made myself something I haven’t had in a very long time.
I momentarily jumped off the low cholesterol bandwagon and indulged in one of the simplest breakfasts in the world, the Egg n’ Cheddar Biscuit. There’s just something perfect about this combination, as most of the leading fast food franchises are quick to attest. My version is better than theirs is, though.
Why? Because I made it myself, that’s why!
I don’t think there’s a reason to post the recipe for this, as I’m sure everyone has their own favorite version. Take a biscuit or English muffin, top with either a scrambled or fried egg and a bit of cheese. Wanna boost your protein? Add some bacon, Canadian bacon (Or ham, for those of you who are actually Canadian), sausage or super thin steak. It’s your choice, make it your way.
Just make it, you’ll be glad you did.

Gee Biggles, an’ just when I was gettin’ ready to talk all nice-nice about you in my next post! ‘sides, it weren’t TOFU bacon, it were TURKEY Bacon. (Still Rat-nasty… I take that back, Rat bacon would have been better) An’ I’m savin’ the bacon for some greens I’m making later this week.
Besides, see how shiny that biscuit is???? It took a lot of melted butter to get ‘er that pretty!

MMmmM, smoked rat. I made the mistake of offering up Meathenge to my doctor. He was interested cause he wanted a blog for his practice. I gave him a copy of the book I co-authored a few business cards. I think I kicked it off with a vegetarian mushroom soup with sausage …
Oh, and at that time my cholesterol came in at 370.
Yanno, I read about your high cholesterol, and then WHAM. I hit the breakfast tacos. I totally get it, Jerry. I have to have my cholesterol checked in a month. Maybe if I’m good for a month (read don’t make this totally droolworthy hometown food dish) I may be able to have a passing grade on my report card.
Oh, and wouldn’t tofu bacon (blech) be called Tofurkin? Bwahahahahahahahaha…

370! Yowza. Hope the numbers have dropped since then, but you are right, a guy with a bigger frame than mine could have higher #’s and still not be at risk. Me, I’ve been under 160lbs most of my life, so they argue with me at over 200 (was 245 last time) Should be lower this time, since I’ve stopped cooking nearly everything in bacon grease, LOL

Some of my biggest challenges come from food blogs. It’s like “Heavy Cream and eggs, YUM!.. No, wait I’m not supposed to eat that!!” and it goes on the list for a special Sunday or something.
I’m not going to let it stop me from living, just try to be a bit more responsible about it.
And nope, Tofu bacon would be called Bac-O’s!
I was at the Berkeley Farmer’s Market this last Saturday, was cold and nearly raining. Anyway, I walked passed a tofu booth, all fine and dandy. Sawr a sign that said Tofu Jerky. No matter how you slice it, that ain’t right. Tofu and Tempe are just fine, but they shouldn’t be pretending to be meat. Cause they ain’t, no how. Ick.
I don’t know what my level is now. Everytime I go in, my doctor says to try yoga. I’m sure it’s lower, but by how much I don’t know. I’ve been 6’2″ and 220 with a 36″ waist for over 15 years. Yoga makes me mad.

Use my favorite breakfast meat here in the Republic of Texas, Mexican chorizo. It CAN be fried in a patty and drained. That would be righteous on an egg and cheddar biscuit. Almost sounds good for dinner tonight.
