Macadamia Golden Raisin White Chocolate Mousse Tartlets Recipe

This is the second in a series of three white chocolate mousse tartlets for the holiday season, look to the end of the article for other recipes.

This version of white chocolate mousse tartlet bears the same humble base of white chocolate mousse and mini fillo pastry shell as the others in this series, but the flavor combinations are most decidedly more refined.  Topped with toasted macadamias, macerated golden raisins and white chocolate chips, this tartlet is awash with subtle yet intensely different flavors and textures that will tantilize even the most fearsome food snob in your group of friends.

The silky mousse is contrasted wonderfully by the crunch of the white chocolate chip, fillo dough and macadamias, while the raisin packs a small but very potent burst of flavor that is beyond heavenly.

Note: this is an adult treat.  There’s too much alcohol in this particular version for the kiddies!

Macadamia Golden Raisin White Chocolate Mousse Tartlets Recipe

Prep Time: 20 minutes
Total Time: 20 minutes

Ingredients

  • White Chocolate Mousse
  • 2 packages (2.1 0z each) frozen mini fillo (or phyllo) shells (30 total), thawed
  • 30 – 60 golden plump raisins
  • 1 oz. Drambuie or good brandy
  • 1/2 cup chopped roasted macadamia nuts
  • White chocolate chips

Instructions

  1. Place raisins in a small bowl or condiment dish. Cover with Drambuie or Brandy. If not completely covered, add cold water until all raisins are submerged. Refrigerate covered for at least three hours or overnight.
  2. Roast macadamia nuts in a dry skillet over medium heat for approximately 3 minutes, tossing constantly. When nuts begin to brown slightly on the edges and smell nutty, remove from pan and allow to cool. Place in zip top bag and pound with your choice of destructive implement until fairly fine. Set aside.
  3. Transfer White Chocolate Mousse from bowl to a 1 gallon zip top bag (or a pastry bag with a pretty tip, if you have or prefer it). Cut approximately 1/2 inch opening in one corner of bag: evenly pipe mousse into each pastry shell.
  4. Place one raisin on each tartlet, add a white chocolate chip and sprinkle with macadamia nuts.
  5. Tartlets may be stored in refrigerator for up to four hours in original fillo shell containers.
  6. Share and Enjoy

What I would have done differently had I thought of it at the time:

I’m thinking a garnish of fresh mint or perhaps macerated Craisins would work well in this case, too.  Perhaps a candied pear or mandarin orange slice?   Use your imagination!
