Spam Fried Rice with Nori
  • 4 cups cooked white rice
  • 1 can SPAM, cut in cubes
  • 1 cup frozen mixed vegetables
  • 1/2 cup bell peppers, chopped
  • 2 cloves garlic, minced
  • 3 eggs, beaten
  • 2 tbsp soy sauce
  • 3 green onions, chopped (whites and stems)
  • 1 sheet Musubi Nori, crumbled.
  • Vegetable or peanut oil, for frying
  1. Heat 1 Tbsp oil in a wok or stir fry pan over high heat. Add spam and stir until well browned. Remove spam from pan and set aside.
  2. Drizzle a little more oil into the wok and add frozen mixed vegetables and bell peppers. Stir until vegetables are cooked through and bell peppers are crisp-tender (about 2 minutes.) Add garlic and cook, stirring constantly, for 1 minute.
  3. Move all ingredients to one side of pan. Add a little oil and pour beaten eggs onto empty half of the wok. Stir briskly until half cooked, then toss all ingredients with eggs to coat evenly. Return SPAM to wok, stir to combine. Add green onions, nori and soy sauce, toss to distribute.
  4. Remove from heat and serve immediately with soy sauce on the side. Garnish with a bit of additional nori if desired.
