Tzatziki Recipe
  • 2 cups Mediterranean-style yogurt (May substitute conventional yogurt)
  • 1 large English cucumber, peeled, shredded and drained
  • 3 cloves garlic, chopped fine
  • 1 tbsp. mint, chopped
  • 1 tbsp dill, chopped
  • 1 ounce lemon juice
  • Salt and pepper to taste
  1. Prepare the yogurt by placing it in a strainer lined with cheesecloth that has been set over a bowl. The bowl should be large enough so that the strainer does not touch the bottom. Cover loosely and store in refrigerator overnight. Discard any juices that collect in the bowl.
  2. Mix all ingredients well, cover and store in refrigerator overnight before serving.
  3. Serve with pita, pita chips, as a relish, on burgers, or use as a vegetable dip.
