Macaroni Salad with Cheddar and Pepper Bacon Recipe
  • 1 lb macaroni noodles, cooked according to package directions and drained
  • 1 large onion, diced
  • 5 eggs, hard boiled, peeled and cut in bite sized pieces
  • 1 small can sliced black olives, drained
  • 2 cups sharp cheddar cheese, cubed
  • 5 strips thick cut pepper bacon, cooked until crispy and rough chopped
  • 1/2 cup light mayonnaise
  • 1 cup ranch dressing
  • 3 tbsp spicy brown mustard
  • 1 tbsp smoked sweet paprika
  • Salt and pepper to taste
  1. Saute onions in a large skillet until browned. Remove from heat and allow to cool.
  2. Add all ingredients to a large bowl and toss to combine. Place in refrigerator and allow flavors to marry for at least 3 hours or overnight for best flavor.
  3. Serve and enjoy!
