Back to school time comes with its own set of challenges. Less time. More stress. Schedules that need to be rearranged. If you add a complicated dinner menu to that, you’ve got the perfect recipe for overload.

Don’t worry. We’ve got you covered, in spades.

We all want to give our kids something healthy and nutritious, but every now and then it’s OK to go over the top and put flavor before everything else. This recipe for bacon wrapped chicken dippers is like that. It’s big, bold and crazy good. Maybe not something you’d want to eat every day…

(Oh, who am I kidding? Of course you’ll want this every day!!)

Bacon Wrapped Chicken Dippers are definitely something both you and the kids will adore, and it leaves more time for sitting around the table together. Protein rich and flavorful. No, it ain’t a salad. It’s fuel for fun.

Another plus… This is finger food, folks. Grab. Go. Dip. Eat.

Make funny faces. Smile. Laugh. This is that kind of dinner. This is the kind of dinner that makes memories.

All it takes is some Tyson® Chicken Strips, a little Wright Brand® Bacon, some mozzarella cheese, and the dipping sauce of your choice.

Chicken strips! Yep. That’s what we’re after. The big meaty ones. Not the little processed guys.

Now for some bacon. In Texas and at H-E-B, that means Wright Brand® Bacon. Why? because it’s freaking amazing bacon. Unfortunately for the rest of the country, it’s a Texas exclusive, so find the best bacon you can where Y’all hail from. (Yes, we have perks in Texas. H-E-B and this bacon are just two of them. OK, Down to cooking our Bacon Wrapped Chicken Dippers:

First things first. Defrost your chicken strips in the fridge overnight. then get the chicken strips and bacon ready to go.

You’re going to need some stuffing. For this, we just used some mozzarella cheese, but if you’re feeling adventurous, you can add jalapeno peppers, bell peppers, onions, or whatever makes your family happy. We’re going kid-tested on this one, so just cheese, please.

Then cut in half lengthwise and add some cheese.

Now for the good part. It’s time to wrap these bad boys in bacon! Ons strip around and then…

NOw the fun part - Wrap those chicken and cheese bits in bacon!

Wrap another half-strip of bacon around the other way. (You might need to use longer strips of bacon if you’ve gone crazy with the stuffing.) Stick a toothpick or a skewer in ’em to hold everything together. A Note Here: Experience taught us to place the bites seam-side down before we skewered. This prevented the bacon from unwrapping as it cooked. The heat of the pan seared the bacon pieces closed.

Now just gather your favorite dipping sauces, pop these bad boys in the oven for 15 minutes at 450 and you’re good to go. On this particular day, I grabbed a bottle of Tonkatsu sauce, which is sort of a cross between Worcestershire and ketchup. You are of course, free to use whatever your family enjoys.

Bacon Wrapped Chicken Dippers
Yield: 6 to 8 servings

Bacon Wrapped Chicken Dippers

Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

A quick, simple and amazingly fun chicken dinner that everyone in the family can enjoy.

Ingredients

  • 1 package Tyson® Chicken Strips or chicken tender style strips of your choice.
  • 10 to 12 strips Wright Brand® Bacon or bacon of your choice.
  • Approximately 1/4 pound mozzarella cheese
  • Dipping sauce of choice. (Go wild here kiddies!)

Instructions

  1. Defrost fully cooked chicken strips in the refrigerator overnight.
  2. Heat oven to 450 degrees.
  3. Cut bacon strips in half crosswise.
  4. Cut chicken strips into 1-inch pieces, then cut those pieces in half through the center of each strip (Like making a "bun" out of the chicken).
  5. Place bottom half of strip on two crossed pieces of bacon. Place cheese on top of chicken and top with second half of strip.
  6. Fold bacon over the top of the chicken and cheese. Secure with a toothpick or skewer.
  7. Place on a baking sheet and cook in a heated oven for 15 minutes, or until bacon is crisp and cheese is melted. Drain on paper towels.
  8. Serve hot with dipping sauce of choice.
  9. Share and enjoy!
